Brussels sprouts often split the room: you either love them or you hate them. Getting them right can be tricky, but these greens can transform into a star side dish with the proper technique.
Fortunately, a food scientist has come to the rescue, sharing her method for achieving crispy and delightful sprouts.
The chef and nutritionist, known as Live Eat Learn on social platforms, offers an approach to create "restaurant-style" Brussels sprouts at home, reports the Express.
Her secret? A simple smash that drives out excess water and expands their surface for unrivalled crispness. In her catchy TikTok clip, she said: "I'm a food scientist and this my secret for making the crispiest restaurant-style Brussels sprouts."
Crispiest restaurant-style Brussels sprouts
Ingredients
- Brussels sprouts
- Two tablespoons of olive oil
- Four tablespoons of nutritional yeast
- One teaspoon of salt
- Half a teaspoon of black pepper
Method
Start by heating your oven to 210C (200C fan). Boil a pan of water and give your Brussels sprouts a brief parboil - just three to five minutes should do it, varying slightly with size.
Chill them quickly under a cold tap in a colander to halt the cooking, then pat them dry thoroughly. Toss the sprouts in a bowl with nutritional yeast, seasoning, and oil until well coated.
Spread them onto a baking tray lined with parchment paper, then take the bottom of a glass and gently press to crush each sprout. Slide them into the oven for 20 to 25 minutes, or until they turn a luscious golden brown.
