In collaboration with the Restaurant Associates culinary team, he's designed an astonishing à la carte immersion of Asian-inspired flavours and seasonal Australian ingredients that demonstrate Martin’s creative flair and connection to Japanese cuisine. Martin created and delivered this year’s NGV Gala menu for over 1400 guests, seamlessly integrating into this year’s celebration of the Yayoi Kusama exhibition. The NGV Gala is notorious for its elaborate and glamorous celebration of art, culture, music, fashion and food. Held at one of Restaurant Associates Australia's iconic venues, the National Gallery of Victoria, the NGV Gala welcomes Hollywood celebrities and people from all over the world for an evening of show-stopping entertainment. The 2024 Gala took place on 14 December and the Restaurant Associates' venue and culinary teams delivered an awe-inspiring food and drink experience for over 1400 guests. With delicious canapes of Crispy Chicken Sushi Cones, Miso Pumpkin Mararon and Aburi Salmon, and two dinners running simultaneously on the South and North sides of the gallery for 400 guests, our teams delivered a seamless service. We’re thrilled to share our journey with Dragonfly, a 100% Indigenous owned business we begun partnering with last year following a search for new suppliers hyper-local to one of our ESS sites. Birrdibirripba, meaning ‘Dragonfly,’ is also named after its founder, Charmaine Richards, a saltwater woman and descendant of the Larrakia nation. The water they distribute is as pure as the ancient lands that have nurtured it for countless generations. Demand for their water products surged after introduction on site. While their 1.5L bottles were popular, customers often needed to buy multiple at once to accommodate their needs. This led to us explore and collaborate with Dragonfly to develop new high-volume 10L water bladders. Over the past eight months, we have worked with them as an incubation opportunity to create this exciting new product and integrate it into our supply chain. The process involved not only understanding their manufacturing and safety standards but also supporting their attainment of HACCP certification. We hope this industry-recognised standard, combined with the new 10L bladder product line, will support Dragonfly’s expansion into new markets and continued, well-deserved success. Earlier this year, one of our WA ESS sites was lucky to have a visit from Master Chef's Brendan Pang. In collaboration with our talented Chefs, Brendan created a Chinese Street Food feast for our residents at a huge scale, with 300kgs each of chicken, beef and pork and, in Brendan's words, "more fried rice than I had ever cooked in my life."
