We'll keep you in good spirits!

About us

Founded and produced in Melbourne’s north-eastern suburbs by Mel and Mick Sheard, Imbue Distillery brings you spirits rich with flavour and imbued with a story. Our good friends Luke + Nikki joined the Imbue family in 2019 and bring much needed logic to our hair-brained plans! Combined we share 60 years experience in Melbourne’s food industry from retail to wholesale, bakeries, catering & hatted restaurants. We carefully source our ingredients – selecting and blending a combination of locally abundant botanicals as well as the obscure and exotic to push the boundaries and bring you both new and nostalgic experiences. We love how the sense of taste is such a powerful gateway into hoarded memories – with every sip, you can reminisce and evoke; and write your future stories…

    Head distillery at imbue distillery

Each day we wake up and do a task some do it for money some do it for love some do it to pay it forward it’s so hard to find something that brings a smile each day! As a baker working for other people I worked on average 55-60 hours a week for other people’s business working around the clock taking phone call dealing with absentee staff and all other aspects but I can say I have done that and survived and learned a lot a whole lot . Taking on the challenge of starting the distillery was huge not only did we have to find some money we also had to work even harder then we had before but we didn’t have a choice it was push thru or just do the same thing and get paid a hospitality wage to do so ! For all that don’t know most bakers are lucky if they take home $ 900 per week as a bakery manager your lucky to take home $1000 or a fraction over and that’s for a lot more hours then a baker , so we didn’t have much money to play with We had been working very hard to pay off our home loan and didn’t have a car loan so lucky I guess Over a year and a half we had saved 25k between Mel and I this included a lot of buying and selling deals to bring in more cash we also borrowed 25k from the house to start the business. Yay we are away ….. shit we are out of money again we we borrowed more from a personal loan I’m my name for 20,000$ and mel took a loan as well for )15600$ hopefully this will last longer then the last lot Ooooooh let’s buy this new equipment another loan came about lol just under $20k again lucky we are both working full time and have absolut faith we can afford to keep pushing 12 months has passed and we have spend a lot of money trying to get it through council at our little house in a small country town called Lismore inn Victoria not NSW Still no joy So after spending many thousands and wasting over 6 months we get told without a pose this place is not suitable for your plan so give up ! By this stage we are 12 months in and had spent a lot of money on lable design our bottles are paid for and ordered from Spain and our website was getting built We are about half way thru 2017 at this point And very disappointed but we keep pushing We find a site in eltham industrial aria walking distance from our residence “Perfect “ I say ! It was a sub lease on a 150Sq factory that would have been separated via a wall At only $100 per week we thought we had won the lottto . All that had to happen was the landlord had to move stuff so we could go to council with a space and have all our ducks lined up 5 months later we are still no where so by this stage we have had to take a lease on a Fortk nox storage unit to store our bottles , boxes , closures and other bits and pieces we had been buying all our equipment was still sitting in the storage facility where we brought it . So now looks like we are back to the drawing board again At this stage we are early 2018 and feeling very defeated but we keep pushing..
