    The future of protein isn’t on a farm... it’s in a fermenter. 🔬 Ashton Ostrander is our COO and a civil engineer, pushing the boundaries of how we produce food on Earth and beyond. In this piece, he breaks down why our current food system is broken and how Maia Farms is engineering a smarter, more efficient future. 🚀🍄 𝐋𝐞𝐚𝐯𝐞 𝐭𝐡𝐞 𝐂𝐨𝐰𝐬 𝐀𝐥𝐨𝐧𝐞 "Cows are remarkable. They turn grass into steak, milk, and even fuel tourism in places like Prince Edward Island. But as protein producers, they’re wildly inefficient—requiring six kilograms of feed to produce just one kilogram of beef. That’s like putting $100 into a machine and getting only $16 back. Cows aren’t the villains here. They’re simply doing what nature designed them to do. The real problem is the system. Every year, we generate over 5 billion tonnes of agricultural leftovers—corn husks, wheat straw, rice hulls—most of which go to waste or low-value animal feed. Meanwhile, protein—the most expensive component of human nutrition—remains difficult to scale efficiently. Even our best solutions, like poultry farming, still run into the biological limits of animals. 𝐀 𝐂𝐥𝐞𝐚𝐧𝐞𝐫, 𝐒𝐦𝐚𝐫𝐭𝐞𝐫 𝐏𝐫𝐨𝐭𝐞𝐢𝐧 𝐅𝐚𝐜𝐭𝐨𝐫𝐲 Instead of relying on livestock, we’ve built a fungal platform that produces high-quality protein with unmatched efficiency: ✅ 99% Biological Efficiency vs. livestock systems averaging just 10-20% ✅ 45% Protein Content with a complete amino acid profile ✅ 93% Less Water & 1000x Less Land than traditional farming At our current performance, processing just 10% of agricultural residuals annually could yield 500 million tonnes of high-quality protein—enough to feed 2.4 billion people or meet the world’s expected population growth between now and 2057. 𝐀 𝐏𝐥𝐚𝐭𝐟𝐨𝐫𝐦 𝐟𝐨𝐫 𝐆𝐫𝐨𝐰𝐭𝐡 This same scalable fermentation system isn’t just for food. By adjusting fungal strains and feedstocks, it can also produce biomaterials, biofuels, and pharmaceuticals—all without the need for costly, specialized infrastructure. But what if we could harness its power in new ways? Matheus Cassol, our biochemical engineer, breaks down the science of fermentation and how Maia Farms is using it to change the game. 𝐖𝐡𝐚𝐭 𝐭𝐡𝐞 𝐡𝐞𝐜𝐤 𝐢𝐬 𝐟𝐞𝐫𝐦𝐞𝐧𝐭𝐚𝐭𝐢𝐨𝐧? "Tiny little organisms moving around digesting stuff? Sounds gross! Well, before we even knew microorganisms existed we had already been using them for delicious things for centuries! For cultural reasons our common reaction is to think of microorganisms as things that are dirty and make us sick. Although that can be true, it’s far from the common reality. Chances are you consume fermented foods every day, and love it! Bread, coffee, chocolate, cheese, any alcoholic beverage, etc. Recently fermentation has become a more trendy topic, gut-health benefits, kombucha, kefir, etc. The simplest way of thinking about this is that fermentation is the conversion of sugars into products by microorganisms. For example, beer is made by cooking grains and feeding that to yeast. As the yeast grow, it uses the sugar to produce alcohol, CO2 and tasty molecules Fermentation is an ancient technology that has revolutionized the world and impacts every day life across the globe. We are working on a new type of fermentation. Instead of making mushrooms work hard to break down wood, we’re giving them a head start. This allows us to produce food much faster and more efficiently."
