We’ve proven you can make delicious burgers in a bioreactor…but what about chocolate? 🍫 Food Brewer, a Swiss startup from 2021, is making sustainable coffee and chocolate without relying on traditional farming 🤝 . They started with cocoa cells from Latin America and now produce coffee cells locally in Switzerland. Using bioreactors, they grow the cells, monitor them, and then harvest them to produce cocoa powder, fat, and coffee. The process involves cultivating the best cells, growing them under the right conditions, and then drying and roasting the biomass. Food Brewer is mixing their lab-grown cocoa and coffee into everyday products, aiming for darker chocolates without dairy substitutes and exploring alternatives like microalgae oil.
