PASTA – You’ll need lasagna noodles that you boil first. Oven-ready or no-boil noodles won’t work. I like to cook the lasagna pasta very al dente. Meaning that I undercook the pasta by 30 seconds to a minute less than the lowest recommended cooking time).
MEAT – You can use any ground meat. 80/20 will be the most flavorful but have the most highest fat content, and 96/4 is the leanest ground beef. I typically opt for 85/15 and drain the excess grease after I brown the ground beef.
SAUCE – The type of pasta sauce you choose depends on your preferences. I often choose Marinara or Roasted Garlic Tomato Sauce.
CHEESES – For this lasagna, I like a triple cheese combination of Ricotta, parmesan, and Mozzarella.
EGG – One large egg acts as a binder for the cheese mixture and adds an extra bit of protein.
PARSLEY – This is optional, but I love adding freshly chopped parsley to the cheese mixture. It adds a bit of delicious peppery sweetness. This is one of the few times that I won’t substitute fresh parsley with dried spices if I don’t have fresh parsley.

How To Make Lasagna Roll Ups

- Preheat the oven to 375º Fahrenheit and cook lasagna noodles.
- Prepare the meat sauce in a skillet and mix the cheese sauce in a large bowl.
- Lay out cooked noodles, spread cheese sauce, then meat sauce, and roll ’em up!
- Place in a casserole dish, top with remaining meat and cheese, and bake for 20-25 minutes.
TIP: If you’re using ground beef with a higher fat content, such as 80/20 or 85/15, you don’t need to add oil to brown the meat. If you’re using 96/4, add 1 tablespoon of olive oil.

Spraying the casserole dish is a good idea so that nothing sticks.
Even though they are roll-ups, serve them with a spatula or spoon. Tongs will squeeze the cheesy goodness out of the rollup.
It’s easy to customize the filling in your roll-ups to satisfy everyone if someone likes more of your hearty meat sauce and less cheese, no problem!

Leftovers
STORE – Place any remaining roll-ups in an airtight container to keep them fresh. Put the containers in the fridge as soon as possible to ensure they stay tasty. Aim to enjoy them within the next 3 days.
FREEZE – If you’re making these in advance or have a lot extra, freezing is a great option. For the best taste, freeze individual roll-ups before cooking them. That way, the cheese stays just the way you like it. Just make sure to wrap each one tightly and place them in a freezer-safe container. You can keep them frozen for up to 2 months.
REHEAT – In the Oven – Turn your oven on to 350º Fahrenheit. Put the roll-ups in an oven-safe dish and cover it with foil. Bake for about 15-20 minutes or until they get hot.
REHEAT – In the Air Fryer – If you have an air fryer, set it to 350º Fahrenheit. Place the roll-ups inside and cook for about 8-10 minutes. Check to make sure they’re warm all the way through before you dig in.
REHEAT – In the Microwave – If you need to eat now and can’t wait, put a roll-up on a microwave-safe plate. Heat on high for about 1-2 minutes.

Lasagna Roll Ups
Ingredients
- 12 pieces lasagna noodles cooked
Meat Sauce
- 1¼ pounds ground beef
- 36 ounces marinara sauce
Cheese Sauce
- 2 cups ricotta cheese part-skim
- 1 large egg lightly beaten
- 2 cups mozzarella cheese shredded
- 1 cup parmesan cheese shredded
- ½ cup parsley finely chopped
Instructions
- PREP – Preheat the oven to 375° Fahrenheit. Cook the pasta according to the package instructions. Cover a large baking sheet with aluminum foil and lay out the cooked lasagna noodles flat. Set aside.
- MEAT SAUCE – Use a large skillet and brown meat over medium heat. Once cooked, drain any excess fat. Add the pasta sauce and simmer until warm.
- CHEESE SAUCE – Combine ricotta cheese, beaten egg, 1 cup mozzarella, ½ cup parmesan, and parsley in a large bowl.
- ROLL-UPS – Spread the cheese sauce equally onto each lasagna noodle. Mix ¾ of the meat sauce onto each lasagna noodle, covering the cheese filling.
- WRAP UP – Roll the lasagna noodles. Transfer the rolls to a casserole dish and top with the remaining meat sauce. Sprinkle with the remaining parmesan and mozzarella cheese.
- BAKE – Cover the casserole dish with aluminum foil and bake for 20-25 minutes at 375° Fahrenheit. Remove the foil and cook for another 15-20 minutes.

Great question! My number one recommendation is blended cottage cheese. Use a blender and blitz the cottage cheese until smooth follow the recipe as directed.
Cottage cheese is great because (blended) it has a similar consistency, is low-key flavor, and adds extra protein.
