7 golden rules of wine storage: Documentation of the stored wines Now comes the seventh, the last and also the most beautiful of the seven golden rules of wine storage: We're done - we've taken everything into account, the wine bottles have been professionally stored. Stored correctly, most wines improve over a long period of time. If you collect wines out of passion and let them mature at home to enjoy them when they have reached their best drinking maturity, you can quickly become the owner of several hundred or even thousands of bottles. You have 12 or more bottles of some wines, 6 of others, some wines are unique ... - and with this highly interesting and exciting culinary variety, it is easy to lose track. It can happen that one or two bottles are forgotten, and when you rediscover them, they are too old and have lost their flavour. At the end of our series, we want to show you how to avoid exactly that. How to get a quick and easy overview of all the different wines from different regions, wineries and grape varieties that you have in your cellar - and how to keep this overview up to date. These are all small and large treasures. Of course we want to have control over what we store, where and for how long, and when it is best enjoyed. But what's the best way to do this? Wine cellar books are a thing of the past - apps are the order of the day! To solve this problem, there used to be a wine cellar book. You wrote down by hand what you had bought, each wine had a sheet with the number of bottles, notes and lots of details. Alternatively, you used a computer and created an Excel list or database in Access ... But that's all pretty tedious and no longer up to date. Nowadays, there are really good apps for mobile phones and tablets, digital helpers that we always have with us. They allow us to see exactly what is in stock at all times. The selection isn't that big, but there's something for everyone! If you speak English very well, that's great, because almost all the apps are available in English. 7 golden rules of wine storage: Purpose and size of the wine rack and wine storage unit If you are considering buying a wine rack, it is important that you are clear about what you want to use it for. There are basically three different options that may apply to you: The small wine rack for every day: You want a small wine rack to always have wines in stock for your daily needs in an attractive presentation. In this case, your wine stock is between 10 and 100 bottles. Of course, you expect to be able to enjoy the stored wines just as you bought them. The wine rack and its wines should not only store the wines, but the wine rack should also match the style of the kitchen or living room perfectly - or even be an attractive eye-catcher. If necessary, take the wines from the rack and temper them to the ideal drinking temperature. If you want to store several wines at the right drinking temperature and your fridge isn't big enough, a wine cabinet is a great solution. You can use it in addition to your wine rack or on its own. This means you always have a selection of wines available at the right temperature. This type of storage is particularly flexible and therefore also suitable for less demanding storage factors (temperature, humidity, etc.). 7 golden rules of wine storage: Choosing materials for wine storage - Part 2 Metal, stone and plastic In our second part on choosing materials for wine racks, we turn our attention to metal, stone and plastic. Metal or steel: Steel is an incredibly versatile material that is very well suited as a material for wine racking. It is characterised above all by two very special properties: its very high strength and its extreme resilience. Another highlight is its almost unlimited mouldability. In contrast to wood, very little material is needed to support the wine bottles. This means that wine racks can be designed in which the rack construction remains discreetly in the background and the bottles stored inside are much easier to see. Metal shelves are characterised by their rather simple, minimalist and graceful style. However, this characteristic can be used to showcase a small number of wine bottles in a very elegant and expressive way. Single bottles in particular can be presented on a wall using a metal construction in such a way that the metal construction is barely visible. The bottle appears to float - a particularly elegant eye-catcher for magnum and double magnum bottles. Metal wine racks are protected from corrosion by a finely textured powder coating in a colour of your choice. We can choose between four first-class materials: wood, metal, stone and plastic. Let's start with wood: Wood is simply the perfect raw material for anyone who wants to combine sustainability and a natural, stylish touch in their wine cellar. Wood is a renewable raw material that protects our environment and helps us to lead a more sustainable life. For many, wood is the most natural and best choice for their wine rack or wine storage. No wonder wood is the most popular material for wine racks! Wine and wood - a combination that delights the heart! Pure nature, so to speak. And incredibly attractive at the same time. Two natural materials that harmonise perfectly with each other and are made for each other! Wooden wine racks are a wonderful way to store your wines in the dark in a particularly gentle way. Wood has the great property of regulating humidity and acting as a natural insulator at the same time. The different types of wood also differ in terms of colour, grain, hardness and weather resistance. Which wood is best suited? Types of wood such as pine, walnut, oak, ash and beech are often used for wine racks. As long as the wine rack is in a place where the humidity is below 60%, the choice of wood is almost irrelevant. Oak is a particularly suitable type of wood as it has properties that are particularly favourable for wine storage: - Oak is very robust and hard - Oak can withstand permanently high humidity. - Oak is practically immune to mould due to its high tannin content against mould infestation. - Oak hardly warps and retains its shape for years. The only disadvantage of oak is that it is relatively expensive compared to softwoods or other types of wood. 7 golden rules of wine storage: 4. odour, vibration and location of wine storage The longer we want to store a wine, the higher the demands on the place where the wine spends its time. Where the wine we have bought is ideally stored depends primarily on whether we want to enjoy it in the next few days or whether we have bought it for stock or even for ageing. The storage period therefore largely determines the requirements for the place where the wine is to be stored. If it is only a few hours or days, it is only important that it is stored in a cool, dark place. If it is to be stored for several weeks, the humidity should also be below 70%. If the wine is to be stored for several months or even years, the odour and quiet storage are also important. Caution: The odour of the storage location can lead to spoilage of the wine. Even if it doesn't seem plausible at first glance, certain environmental odours can be absorbed by the wine in the bottle over time. Depending on the odour, it takes 2 to 3 weeks for it to diffuse through the cork into the wine; with some odours, such as solvents, it happens more quickly. Other closures such as glass corks or screw caps also allow odours into the wine. This is because the odour molecules are perceptible to humans even in very low concentrations and a constant gas exchange takes place via the closure. A very typical negative example: Wine that is stored in a car garage next to petrol and in combination with car exhaust fumes or in a hobby room together with paints and solvents such as turpentine absorbs exhaust fumes and solvents via the cork and changes the wine's sensory properties. Wine maturing over many years needs rest - vibrations cause wine to age more quickly. Frequent shocks in the form of vibrations - e.g. from a washing machine or a nearby railway line - accelerate the oxygen absorption of the wine from the remaining air volume in the bottle and thus the ageing of the stored wines. Above all, the pleasant aromas of the wine decrease with frequent vibration in the wine store - in other words, accelerated ageing takes place due to biochemical reactions of the ingredients. A frequently mentioned phenomenon of vibrations or periodic shocks in red wines is the shaking up of a red wine deposit, which develops over time in some red wines. However, this has no or only very minor negative effects. 7 golden rules of wine storage: 3. light The worst thing that can happen is to expose a sparkling wine in a white glass bottle to direct sunlight for a long period of time. After just a few days, the sparkling wine takes on a very unpleasant odour reminiscent of cheese, sulphur compounds, cabbage or rubber, known as "cheesiness" This defect, known as light taint, was first discovered in champagne and referred to as "gout de lumière". A reliable protection against this light flavour is absolute darkness, i.e. the absence of light and a dark brown or even black bottle. What does light do? Light is electromagnetic radiation and is rich in energy. Many of us have already felt this in the form of sunburn on our skin. Under the influence of light, vitamin B2 or riboflavin in particular is stimulated, which is responsible for the yellow colour in white wine and sparkling wine, among other things. Riboflavin, the yellow colour in wine, acts as a catalyst for reactions with substances that do not take place in the dark. The result of the reaction are compounds that make white wine or sparkling wine smell really bad. Incidentally, light flavours can be found in many foods, most notably beer and milk. 7 golden rules of wine storage: 2. humidity The ideal humidity for storing wine is between 45% and a maximum of 65% relative humidity. This is important, even if the humidity is completely insignificant for the wine itself. If it gets drier, there can be a problem with the cork, which loses its elasticity due to the dryness. A cork that has dried out too much allows a greater exchange of air, which causes the affected wine to age more quickly. However, the problem of corks drying out is rather rare, as the cork always gets enough moisture on the wine side. In addition, most bottles with corks have a capsule that additionally protects the cork from drying out. For wines with a screw cap or plastic cork, excessively dry storage is not a problem. Excessive humidity is often a problem when storing wine From 70 % relative humidity, the growth conditions for moulds become increasingly favourable, from 80 % they are ideal! Moulds attack all organic materials, including wood and preferably labels. If a wine store is too damp, the labels are either covered in black spots or are no longer legible within a few weeks. Wine bottles with such labels are disfigured or you can no longer recognise which wine it is. And what happens if the cork is mouldy? This happens - but it is not a problem, because mould does not grow through the cork into the wine - mould is killed by the alcohol. The wine in the bottle with the mouldy cork is fine. Therefore, wash the cork with hot water, brush it off and dry it before opening. Humidity is therefore an important criterion for wine storage in order to ensure the protected and hygienic storage and development of wines in a healthy air and room atmosphere. If the humidity is too high, not only are the wine bottles in danger, but mould growth also poses a risk to all organic materials in the wine store and their spores are problematic for health. Controlling the humidity is easy and the measuring devices are inexpensive. With appropriate control, mould growth can be prevented and the best conditions created for ideal wine development. 7 Golden Rules of Wine Storage: 1. Temperature To make a long story short: Wine, regardless of type, should ideally be stored at 8 to 15°C, no warmer. If the wine becomes warmer, the delicacy is lost very quickly, the wine loses its elegance, finesse and fruitiness and is simply no longer good. This process is permanent, i.e. it cannot be reversed by re-chilling. Colder is not a problem as long as it does not get so cold that ice forms. This is the case from around -5 °C, or from -7 °C if the alcohol content is higher. If ice forms, the ice needs about 9% more volume than the wine - with the result that the wine ice pushes the cork or screw cap away and the bottle becomes leaky. If the ice thaws again, the bottle is open and can no longer be stored. Once wine has frozen, it is best to drink it immediately after thawing - it is still good then, but will not improve. Of all the criteria that need to be considered when storing wine, temperature is the most important - but why is that? The reason is the temperature-dependent reaction kinetics: if it gets warmer, the ingredients react more intensively with each other, if it gets colder, the reactions slow down. Based on 10 °C and a shelf life of 12 months, it can be simplified to say that the reaction rate of the ingredients with each other doubles and up to quadruples with every 10 °C increase - and the shelf life is halved or reduced to ¼. At 20 °C, the reaction rate is therefore twice as high as at 10 °C, the shelf life is only 6 months, at 30 °C it is at least four times as high, the shelf life is only 3 months, at 40 °C it is already ten times as high or higher, the shelf life is only less than 1 month. In addition, as the temperature rises, reactions take place that do not occur at lower temperatures. Therefore, at temperatures above 20 °C, the tasty aromatic substances in the wine are lost very quickly and, unfortunately, irretrievably. But beware: wine storage temperature is not wine drinking temperature. The fruitiness had disappeared, the wine was boring and stale. What had happened? The last bottle had been sitting by the window in the warm kitchen for months. ... Almost everyone who likes to drink wine has experienced something like this. What's behind it, why does it happen? Wine is constantly evolving in the bottle, changing its taste and developing its drinking maturity. Some wines have already reached their optimum drinking maturity when they are purchased - young, fruity white wines, for example. Other wines are designed for a long development and only develop their full aroma and taste potential after years - these are the top white and red wines. Spain, the largest wine-growing country in the world with 955,000 hectares in 2023*, has focused its quality legislation for wine very strongly on wine storage: A Gran Reserva from Rioja must be aged in the bottle for at least two years before it can be sold as a Gran Reserva. Good wine storage therefore protects my wines from negative influences, ensures that my wines have optimal development conditions and that a good taste experience is maintained or improved over time. Incorrect wine storage ruins wines, they become unpalatable within a short time.
