🌱🔬 Exploring the Potential of Plant-Derived Extracellular Vesicles 🔬🌱 We are excited to share the groundbreaking research led by newly awarded PhD Ziyu Huang and her supervisor Martin Krøyer Rasmussen. Their latest study, published in Food Research International, reveals how tomato-derived extracellular vesicles (EVs) enhance zinc absorption by downregulating metallothionein expression in intestinal cells. This is the first evidence that plant-derived EVs can regulate mineral transport in the intestine, opening new possibilities for functional food applications. It is really nice to be able to share the start of a new ESS lighthouse, which is partly hosted at Aarhus Universitet and involves Department of Chemistry - Aarhus University, Interdisciplinary Nanoscience Center - Aarhus University and Department of Food Science, AU FOOD. With this we will be able to build up neutron scattering expertise again (not that I myself have forgotten…) to benefit from the European Spallation Source ERIC in new research in Food and Pharma. Martin Malmsten, Department of Pharmacy, University of Copenhagen is director of the lighthouse and Jacob Kirkensgaard, Institut for Fødevarevidenskab, KU FOOD is co-PI.
