Reduced is an innovative food production company. We specialise in creating high quality food products made from organic surplus produce. Our mission is to reduce food waste by using vegetables, protein and other sources of nutrition left over from the conventional food industry. Always with a focus on taste, quality and sustainability. Right now, all our time and effort is going into cooking and developing stock. Stock is one of the main elements of professional cooking as it forms the base of deep and intense flavours. Stock is also a product that allows us to use vegetables and protein from alternative sources. Hence, we use “ugly” vegetables supermarkets have rejected, seaweed, and bull calf bones in our recipes. All produce that traditionally wouldn’t be used in conventional food production due to its texture, shape, size or colour. But this doesn’t matter to us. As long as the quality is high, and the taste is on point – we use it. We want to keep developing and challenging how we think of produce and food products. So far we’ve learnt this takes time and can be frustrating. But hopefully our approach to food production can contribute to the reduction of food waste and bring healthy products into the kitchen and homes of many.

The real price of taste and flavour 🏆 Taste and flavour are interesting elements. Everyone knows they’re important, but it’s hard to put a price on them. When we at REDUCED talk to product developers, it goes without saying that taste and flavour are essential. When we talk to purchasers, taste and flavour are also important, but so is price. Outside the food industry, taste and flavour can be tricky. We can agree they have high value, but how valuable are they really? A study on 3000 people from the International Food Information Council Foundation shows that 88% of consumers found taste to be their primary reason for buying a product! 📈 This was a significantly higher score than price, healthfulness, and convenience. This means you can develop the healthiest and cheapest product in the world, but if it doesn’t taste good, consumers won’t buy it twice. A Nielsen study of 12.000 product launches across Europe showed that 76% of all new products fail to retain a retail listing beyond one year 📉 In my view, this clearly puts a price on taste and flavor. You simply can’t afford not to have premium taste and flavor if you’re serious about the success of your food business. Compromising on taste and flavor decreases the chances of success for a food product, and failure is very costly in the food industry. The money spent on new product development, marketing, sourcing, packaging, and logistics is at risk if the product is delisted. Therefore, spending on taste and flavour is, in my view, the “cheapest” yet most effective risk mitigation you can employ in the food industry. At REDUCED we develop taste solutions that have proven superior to our industry competitors when added in applications. Additionally, we have shown that we can compete on cost in use and labelling options. Created for food industry and foodservice professionals, the REDUCED Shore Crab brings a sustainable, high-quality flavour that integrates easily into various applications such as soups, sauces, and ready-made meals. In Danish and North European waters, shore crabs are caught by the thousands, disrupting the marine ecosystem by consuming eelgrass, a vital species that supports biodiversity. With the decline of their natural predator, the cod, these crabs have flourished unchecked, creating environmental challenges and difficulties for small-scale fishermen, whose nets and fish stocks suffer from this unmanageable by-catch. We work together with Danish leading fishery Fiskerikajen ApS to source our shore crabs, turning this problem into a scalable opportunity. Working closely with small-scale fishers, Fiskerikajen has created financial value and application potential for these shore crabs, considered a low-value catch with significant environmental drawbacks. Through this partnership, we’ve transformed shore crabs into an ingredient that combines sustainability with rich, balanced flavour. With notes of sweet, umami, and roasted crab shells, REDUCED Shore Crab brings depth and versatility to many applications. Can we eliminate all food waste and loss before 2030? As our co-founder Emil Munck de Voss pointed out at Future Food-Tech, "alone, we will not be able to eliminate the billion tons, but together, we can hopefully tackle a fair share of it." "Can we eliminate all food waste and loss before 2030?" This question was raised at the end of the panel discussion at Future Food-Tech, where I took part. My immediate response was, unfortunately, no. A recent report* from the United Nations shows that: - 1.05 billion tons of food were wasted in 2022 (!!!) - The combined toll of food loss and waste on the global economy is estimated to be around USD 1 trillion annually (Denmark's GDP is USD 405 billion). - Still, 783 million people went hungry, and a third of the global population faced food insecurity. The staggering amount of food wasted, combined with increasing food insecurity, is beyond alarming. Coupled with the huge waste of resources, it seems obvious that this needs to be solved now now now. However, the numbers are so high that I don't believe we can solve the issue within six years. But I do believe we can make a significant dent in these numbers. One of the key tools is upcycling ✅ At REDUCED, we create taste solutions based on upcycled raw materials. We know that most of our potential customers cannot prioritize sustainability claims over price, labeling options, and, most importantly, taste and flavor. Luckily, upcycled raw materials enable all of that if you have the right technology. We have recently delivered (for us) large shipments of our taste solutions to a multinational food corporation. Upcycling and sustainability are not mentioned on their final product label, and that makes me excited. This shows that upcycled food ingredients can compete with "traditional" ingredients on all critical parameters. I, of course, highly value correct sustainability claims, but I also have strong confidence that the upcycled movement offers this and so much more. Food loss and waste account for 8-10% of annual global greenhouse gas emissions. To tackle this, we need to focus on awareness and systemic change, as well as easily applicable solutions that meet customers' everyday needs. I believe we have created such a set of solutions at REDUCED.
