TFTAK is an Estonian multidisciplinary CRO founded in 2004. TFTAK is focused on two main research areas: bioprocess optimization and food research. The organization harbors a wide range of expertise with more than 100 highly skilled personnel and specializes in the use of modern analytical methods, systems biology, and synthetic biology principles, aiming at the development and implementation of innovative food and fermentation technologies. Broad knowledge of microbial metabolism and fermentation enables us to provide an array of services through a comprehensive understanding of the molecular components. TFTAK combines bioinformatics with sophisticated instrumental analytical methods and a pilot-scale cultivation facility to find solutions to even the most complex questions and help our customers optimize the production of single strains or microbial consortia. 🚀🌿 On November 29-30, a food hackathon in Tartu took place, bringing together innovators, students, and industry experts to tackle critical challenges in the food sector. 🍽️🚀 TFTAK had the honor of being a supporter of this incredible event. ✨ 6 Teams, 26 Hours of Innovation ✨ Participants tackled 3 challenges from TFTAK, 2 challenges from METK - Centre of Estonian Rural Research and Knowledge / Maaelu Teadmuskeskus, and one participant-submitted challenge. Each team worked tirelessly, transforming ideas into actionable solutions. We witnessed networking, contact sharing, and collaboration agreements that promise to continue long after the hackathon. 👏 3 teams received special prizes, but as you know, all participants are winners! The jury had a tough time choosing the winner because all the teams did such great work. 🏆 The Hackathon Winner is BioBite, who identified an opportunity in the rising consumer demand for healthier food options. Their solution? 100% Edible, Delicious Fruit Sticks! They even secured an investor by the time they pitched! 🤝 Congratulations to Laura Kuklase, Shehzad Hussain, Margarita Gonzales, Helen Maidre, and Muhammad Anwar ul Haq. 🌟 TFTAK’s Special Prize, consultation worth 500€, went to the VFM team for their innovative vertical farming solution focused on protein production. The VFM team is interested in alternative proteins and their extraction, which is exactly our cup of tea. Since TFTAK also has the appropriate lab and equipment, we can provide support in implementing the innovative idea. 🤝 Congratulations to Koit Kõrgnurm, Cristofer Rybner, and Martin Kala 🎓 The Special Mentoring Prize from Tartu Biotechnology Park was awarded to BumpFuel, a science-based platform supporting nutrition during motherhood. It was impressive to see how thoroughly they analyzed their competitors, and they’re already planning a meeting with an existing maternity app team. 🤝 Congratulations to Elisabeth Luisk, Kädi Rõõmus, and Ivo Kändla. 🚀 Other Amazing Teams worked on ideas like: Clarifying “Best Before” and “Use By” dates to reduce food waste. A web platform providing nutritional information via QR codes for cafes and restaurants. An AI-based personalized nutrition app promoting sustainable and local food choices. 🙏 🥰 Thank you to Tartu Biotechnology Park for organizing such a great event and inviting Rain Kuldjärv, the Head of Functional Foods and Beverages Group in TFTAK, to attend as keynote speaker, mentor, and member of the jury. We presented how innovation is being made in the food and biotechnology sectors and how we can help the food industry create innovative products. 😊 Guests had also the chance to taste "salmon fillet" made from pea protein, "chicken fillet" made from fungi protein, and cookies baked from wood. The visit was part of the 🚀 development program Spinnaker organized by the Riigikantselei tippjuhtide kompetentsikeskus / Top Civil Service Excellence Centre. 🌍 Food ingredients Europe 2024 was good! Sharing insights into the whole food manufacturing and having meaningful conversations with both new and familiar faces. Some thoughts to take with me and with TFTAK: 💡 Innovation doesn’t need to be always disruptive. It’s necessary to have these incremental steps. 24 of 34 new product introductions were related to making existing food ingredients healthier or more nutritious. 🌿Harnessing the power of nature wasn't forgotten. It seems that rosemary was one in the centre stage throughout FI. Also, proteins from all kinds of sources are here to stay. A cool solution came from Valio, who presented lactose-free milk protein for better digestive health. ✨ The most amazing solutions are simple. Aviko Potato Cheez was a wonderful solution to replace dairy-based cheese in sausages. Seaweed Food Solutions makes algae just to be a wonderful sea-tasting flavouring. Agrain functional flour and beer chips made from brewer’s spent grain. 🤔 I recently heard from the academia world, that all the food manufacturers care only about profit. There is surely some truth to it. However, most of the food world is concerned about sustainability and health. 🌱 The key trends include reducing sugar, salt, and fat, promoting sustainability, ensuring food system resilience, and moving to clean labels. SUNFLY spreads are extra nutritious, sustainable and oh, how tasty. 🤝 Innovate together.
