When I was in university, my phonetics professor had a saying that he repeated constantly: "Beware your own expectations." His theory was that about 95% of perception is expectation. When you think about it, this can be applied to all aspects of life. We hear what we expect to hear. We see what we expect to see. Generally, we perceive what we expect to perceive. So the best way to get an accurate transcription that respects language diversity, is to let go of your expectations. I turn off my English brain, that listens for English speech characteristics, and listen to what I'm actually hearing, rather than what I expect to hear. It was difficult to do at first, but like with anything else, it got easier with practice.
