"Foodtech" on one side, "natural food" on the other. These were the two themes of the events where Edonia was invited to speak this week. And no, these topics are not contradictory—quite the opposite! In fact, this is at the core of Edonia's mission: leveraging food science to create more natural ingredients for the food industry. Pierre (on the left) spoke at the Foodtech Festival organized by Startup Palace in Nantes, where his presentation won the award for best "tech" pitch. Meanwhile, Hugo (on the right) participated in a panel discussion on "Will the future of food be written without ultra-processing?" organized by Bpifrance during the BIG event. A great "double" opportunity to express our vision: reconciling naturalness, taste, and performance through the power of microalgae.

Edonia is now officially co-financed by the French government in the industrialization of its technology 🇫🇷 France, through its “France 2030” program, is investing heavily in innovative technologies and ecological transition. Edonia is among the supported companies after winning the “Innovate to achieve agroecological and food transitions” call for projects. A substantial financing in the form of a grant and a recoverable advance is co-financing the industrialization of our Edonization technology. Through this grant, the French government is betting on our team to work on its protein sovereignty. We are pleased to see the convergence of our vision with that of the state: microalgae, if we find the right food uses, will be a key player in this protein transition movement that our planet and its inhabitants need. This funding is both an honor and a responsibility for us. I will be attending Vitafoods Europe next week! Vitafoods is the World's Nutraceutical Trade Show. I'm excited to share that Edonia is a proud finalist in the Startup Innovation Challenge under the 'Most Innovative Ingredient' category. I will be pitching in a closed session on May 13th at the Future of Nutrition Summit in front of the jury, and publicly the following day during the event. Since I never travel without my cooler full of prototypes, this will also be a great opportunity for some tasting meetings with global leaders in health food. Several organizations are attempting to address the issue of feeding everyone while the world's #population continues to rise. One of the firms employing microalgae to create protein components is Edonia, located in Paris. Edonia is a new player in the commercial algae business, which is projected to be worth $25.4 billion by 2033. Other firms involved in this sector include Brevel, AlgaeCore Technologies, Algenuity, and NewFish. With its newfound €2 million ($2.1 million), the firm is advancing its efforts to produce plant-based #products made from microalgae biomass derived from spirulina or chlorella, which Edonia CEO Hugo Valentin claims is more nutrient-dense than meat in a TechCrunch interview. He claimed that throughout his time at Ammi, he became increasingly certain that microalgae will be crucial to the current protein #transition. Edonia produces the protein by a novel process known as "edonization," which involves transforming microalgae. This process turns the biomass of microalgae into a textured superfood with a wide range of flavor, aroma, texture, nutritional, and environmental #benefits. The edonization #process turns the green hue into a brown that seems deeper and darker. According to Valentin, it changes the texture to "meaty-like tender grains" with aromatics like to those produced by smoking or grilling. Furthermore, the minimally processed Edo-1 is #composed of necessary amino acids and contains additional minerals and vitamins, making up 30% of its protein content. Valentin also wanted to demonstrate how microalgae may lower emissions at a time when our food is responsible for 34% of greenhouse gas #emissions. In around two years, Valentin hopes to have a fully functional #plant. Additionally, the firm is collaborating with beta testers from food manufacturers to create recipes and culinary products that use Edonia's components. Leading the €2 million investment was the French venture capital firm Asterion Ventures, which also made a recent #investment in Diamfab, another "green" business. Edo-1, according to Valentin, may enhance the nutritional value of many items such as bread, cakes, cream, and cereal bars without compromising the #taste experience. It can even replace meat in these products. According to Valentin, Edonia will be able to start producing on an industrial scale this summer. Edonia is now building up its industrial prototype. At Edonia, we've had the opportunity to participate in various acceleration programs, but one stands out as particularly crucial in our launch: the EIT Food Seedbed Incubator (by the European Union). This program enabled us to conduct an in-depth and efficient market exploration over this past summer. We carried out over 100 qualitative interviews with industry professionals, which allowed us to deeply understand our market and accordingly define our positioning.
