Dexamenes Seaside Hotel is an architectural slice of Greek trading history on the mainland’s western Peloponnese coast. Inside an abandoned wine factory set directly on the sea, the property offers guests the singular hospitality experience of sleeping inside old wine tanks from the 1920s, which have now been minimally reanimated with steel, engineered glass, timber, and a clean-lined aesthetic. At our “Zymosis” dinner, an immersive experience at the dex.Silo.01 restaurant, we aim to explore the importance of fermentation in our culture, science, religion, and sustainability practices. Bread, a cornerstone of Greek diet and traditions, is certainly no exception. The visual artist Georgia Kotretsos (representing THE ΤΕΛΟΣ SOCIETY *) traveled around Greece documenting the role of bread in our traditions and listening to stories from bakers in remote villages to modern Athens bakeries. She has been our guest to discuss the cultural significance of bread, exchange experiences, and bake together. https://lnkd.in/dJzdVb-G *The cultural research program ‘BREAD & CHARCOAL,’ 2023-2024, by THE TΕΛΟΣ SOCIETY (TTS), studies and combines the traditional way of making bread in Greece, bringing to light both traditional and artisan bakers who revive the art of baking with contemporary artists and professional from the world of culture. "BREAD is CULTURE" Συζητάμε με τον σεφ, Στάυρο Κούση και σου σεφ, Θοδωρή Κωστόπουλο για τη παρασκευή του ψωμιού του μενού γευσιγνωσίας "Ζύμωση". Κατά τη διάρκεια της παρασκευής δοκιμάσαμε τα τρία διαφορετικά ψωμιά που παρασκευάζουν (όπως μας έχει υποδείξει στο παρελθόν ο bread sommelier, Δημήτρης Φραγκογιάννης). "ΖΥΜΩΣΗ" Μενού γευσιγνωσίας από τον consultant chef Γκίκα Ξενάκη και τον ταλαντούχο chef de cuisine Σταύρο Κούση. Ο σεφ Ξενάκης έχει εμπνευστεί το φετινό μενού του από τη ζύμωση του κρασιού που γινόταν στις δεξαμενές και ένα από τα εντυπωσιακά του στοιχεία είναι ότι τα υλικά σε ζύμωση δεν επηρεάζουν την ελληνικότητα της γεύσης, αλλά απλώς δίνουν την απαραίτητη ένταση με τις οξύτητές τους. Black Corinth Currants are deeply rooted in the heritage of Dexamenes. This grape variety was the one used in the post-war winery's production since the 1920s. Although currant production in our region has significantly declined, some dedicated farmers continue to preserve this tradition. We are truly honored to see young producers upholding the practices of our ancestors.
