Savorworks’ Approach to Crafting Distinctive Coffee - Pineapple Fermentation At Savorworks, we believe that exceptional coffee is born from an inoculation of tradition and artistry — Inspired by the meticulous fermentation techniques of the wine industry, scientific precision is applied to transform coffee from good to extraordinary at the Riverdale Estate. Pineapple fermentation is one of those techniques which is used to provide the best that coffee beans have to offer. It begins at the farm, where hand-picked cherries are carefully washed with natural Yercaud spring water to ensure a balanced mineral content and pH. From there the controlled fermentation process is adapted from wine-making, leveraging the interaction between yeasts, microbiomes, and sugars to amplify the coffee's natural characteristics. This precise fermentation unlocks hidden depths in the flavor profile, transforming the beans into carriers of complex notes that excite the palate. Regular monitoring of temperature, pH, and microbial activity ensures that every batch maintains its integrity, developing nuanced layers of taste and aroma. After fermentation, the beans are sun-dried for 25-30 days on raised beds, preserving the flavors cultivated during this intricate process. This approach, honed through knowledge borrowed from centuries-old wine-making traditions, allows us to push the boundaries of coffee crafting while respecting its roots. Featuring specialty Arabica coffee with a medium roast profile from the renowned Riverdale Estate in Yercaud, India, and single origin, artisanal bean-to-bar chocolate crafted from premium cocoa beans in Anamalai, Karnataka, each element reflects both Thai and Indian cultural craftsmanship. During our creative process, we turned to our co-founder Paweena for her invaluable insights into Thai culture, given her roots in Bangkok. In our discussions, we asked Paweena which of our chocolates would best complement a Thai-inspired design. Drawing from her heritage, she quickly recommended our 65% chocolate with roasted almonds and sea salt, a favorite among Savorworks patrons. She likened its universal appeal to the youthful and playful character of Hanuman—a figure deeply rooted in Indian mythology and reimagined within Thai culture.
