Do you hear so many instances of allergies in India which were not much prevalent earlier ? India is major spice eating country and spices plays important role in increasing immunity. Earlier we used to eat spices which were good quality and processed carefully. Now legacy brands and local players are not able to provide that quality leading to deterioration of immunity cover our previous generations had.. Adulteration is major issue in Spices nowadays. There are mainly 4 types of such deteriorations or adulteration – 1.      Lower quality ingredients - Supply chain of spices is highly unorganized and sourcing directly from farmers is very difficult leading to mixing of lower quality from multiple sources and lack of proper storage and handling. Lower quality spices like fungal infested, lower grades, stones, etc. leads to overall quality deterioration. Mixing of harmful look-a-like also happens due to poor control in supply chain like argemone seeds in mustard. Lower quality fungus infested ingredients also lead to presence of aflatoxins in spice powders. 2.      Artificial harmful Adulteration for better appearance or reduce cost – These are mainly two types – one to improve appearance like White cement powder in Cumin, artificial shinning oil in mustard or red dye in chilli etc and two to lower the cost like mixing of horse dung in coriander powder. 3.      High volume high temperature processing leading to quality deterioration – Commercial level modern day production units operate on high speed and generate high temperature. This high temperature and high RPM processing leads to oxidation and loss of volatile oils in spices and generates harmful free radicals, toxins and reduces nutritional value of the spice powders. 4.      Chemical artificial preservatives for increasing shelf life of packaged products – Many chemicals like ETO etc are used to increase shelf life of packaged spices which are harmful.   In addition, natural aroma and taste is also first casualty to this ultra-processing. We at Khetika are committed to provide high quality food including spices and our product development is going on since last 8 months to develop spice powders which are free from all of the above.
