[en] Solid food residues from market places represent about 10% to 20% of the total wastes of a city. A big proportion comes from the overproduction of fruits and vegetables in some production steps, its low price and abundance, turning them into potential contaminants, particularly since not always there is an appropriate knowledge and experience in its alternative use. [en] The generation of organic solid waste and its inappropriate management is considered one of the main environmental problems in the world associated with emissions of methane from landfill sites, with emission of dusts, odors and hazardous gases, and with contamination of water.
