Are We Going to Eat Algae Now? 🌿 On our recent trip to Iceland for the Ultra B-12 project, my colleague Katrine Kiib Rørby and I got to dive into some really cool ideas for boosting sustainable nutrition. 🌍 Vitamin B-12 is super important for our health, but it can be tricky for vegans since it's mostly found in animal products. That's why finding a sustainable source of B-12 is such a big deal, and that's what Ultra B-12 is all about. While in Iceland, we visited a power plant that supports algae production with sustainable energy by using thermal power. ⚡ And the best part? We tasted Spirulina in all sorts of ways—as an umami boost, a natural color, and used in different dishes. 🍽️ It was such a fun and eye-opening experience to see how versatile algae can be in food. This whole trip really showed us the potential of algae as a sustainable food source, and I'm super excited about what’s next with Ultra B-12! 🚀
