She noticed how much-used coffee grounds coffee shops were throwing away—tons of it ending up in landfills—and thought, “Why not turn this waste into fresh, delicious mushrooms?” That’s how Lou Mushrooms was born: a business tackling food waste, promoting sustainability, and educating the community about eco-friendly practices all at once. Here’s how it works: Oyster mushrooms grow well on coffee grounds. Lou Mushrooms collects coffee waste from local coffee shops and uses it to grow fresh, locally produced mushrooms. This not only cuts down on waste but also supports sustainable food production while creating a closed-loop system that’s good for both the planet and the community. Of course, like many businesses, Lou Mushrooms has faced challenges, especially during these tough times. For safety reasons, they’ve had to put things on hold since their process relies on moving around to collect coffee waste.
