As many of us saw, the fires in the city of Los Angeles, California were devastating for many families, clients and friends, that is why in collaboration with the Sushi Chef Institute 🍣 🧑🏻🍳we provide kanpachi 🐟 so that their students can prepare a special meal in gratitude to the entire community hard work by the heroic fire department 👨🏻🚒 to fight these fires 🔥 for weeks. In this way we want to return a little of how much they did and recognize their bravery. We had the opportunity to collaborate once again with the students from the Academic Department of Fisheries Engineering at the Autonomous University of Baja California Sur. This time, the collaboration had a gastronomic focus, where the students received kanpachi, conducted various analyses such as yield studies, bromatological assessments, and process documentation for smoking the fish, resulting in a delicious kanpachi empanada that was enjoyed during the Gastronomic Showcase.   We sincerely thank the students for their enthusiasm and commitment throughout this process and for their excellent final dish. Agradecemos a los estudiantes el entusiasmo y compromiso mostrado al realizar todo este proceso y su platillo final. In Omega Azul, the collaborative work 🤝 we carry out with various institutions from our community and sector is of utmost importance. Today, we would like to tell you about the active collaboration we have with the Universidad Autonoma de Baja California Sur, which allowed us to welcome students from the Department of Fisheries Engineering to discuss “Technology for Aquaculture Production 🐟 ,” one of the required courses in the Bioengineering in Aquaculture curriculum.   The students learned about the infrastructure of the marine nets we have in offshore, and how they are one of the most efficient and sustainable methods for contributing to the production of high-quality protein, such as our kanpachi.   These collaborations help us promote innovation, creativity, and the ability to find new ways of doing things and solving problems 🙌 . Y hoy queremos contarles sobre la colaboración activa que tenemos con la Universidad Autónoma de Baja California Sur, la cual, nos permitió recibir a los estudiantes del Departamento Académico de Ingeniería de Pesquerías para hablar sobre “Tecnología para la Producción Acuícola 🐟 ” que forma parte de las materias obligatorias del Plan de Estudios de Bioingeniería en Acuicultura. Los estudiantes conocieron sobre la infraestructura de los víveros marinos que tenemos y cómo estos es uno de los métodos más eficientes y sostenibles para contribuir a la producción de proteína de alta calidad como nuestro kanpachi. Estas colaboraciones nos ayudan a promover la innovación, la creatividad y la capacidad para encontrar nuevas formas de hacer las cosas y solucionar los problemas 🙌 . A few days ago we had the opportunity to be part of the menu at the The Chef Meets Mexico City edition at the Salazar restaurant where Chefs David Yoshimura with a Michelin Star ⭐ from Nisei restaurant in the US, Edo Kobayashi from Grupo Edo Kobayashi and Alan Yáñez from Salazar delighted us with incredible Japanese dishes. Our Kanpachi was part of Moriawase by Chef Edo Kobayashi and a kanpachi sashimi with seasonal fruits in ponzu sauce and kosho by Chef David Yoshimura, both exquisite dishes, totally fresh and with strict attention to detail in their presentation.
