About us
The Riddet Institute is a national Centre of Research Excellence (CoRE) which focuses on world-class food and nutritional sciences, in collaboration with international research and higher education organisations. The Riddet Institute was established in 2003, being awarded CoRE status by the New Zealand government in 2008, and has strong partnerships with Massey University (its host institution), University of Otago, University of Auckland, Plant & Food Research and AgResearch, as well as other international academic networks. The Riddet Institute’s core values include excellent science which creates outstanding research, world-class education which generates tomorrow’s agri-food thought leaders, and a commitment to future-proofing New Zealand’s food industries. Our top quality students come from all over the world and, following their studies, they are readily sought for positions in industry and academia in New Zealand, as well as internationally. The Riddet Institute regularly scores within the top 1% of comparable organisations nationally and internationally. It is a world-class science institution.

The Pūhoro STEMM Academy marked the end of its 2024-2025 Internship Programme with a Pō Whakanui event which was a celebration of the talent and hard work of the Pūhoro interns across Aotearoa including 5 tauira hosted by the Riddet Institute in Palmerston North. Congratulations to Quitara Naera for receiving the Pūhoro STEMM Communication Award at the Pō Whakanui for her poster on ‘Improving fermentation efficiency in plant-based milk bases.’ Her internship project at the Riddet Institute aimed to optimise fermentation processes of plant-based products by reducing fermentation time through various processing conditions. We congratulate all of the 2024-2025 Pūhoro interns for their successful mahi and look forward to hosting the next cohort of interns in 2025-2026!

We are pleased to share a recent publication from our PhD student Chengyi (George) Yang! This work, a collaborative effort between University of Otago and The New Zealand Institute for Plant and Food Research Limited, as part of the Riddet Institute Centre of Research Excellence, investigates the sensory and textural properties of wheat pasta sheets with pea protein substitution. This summer, I had an opportunity to work as a summer intern at Riddet Institute Institute, focusing on the development of set and stirred pea protein yogurts fortified with calcium carbonate. I also explored the impacts of pectin concentrations on the gel strength of the yogurts, contributing to the creation of an innovative plant-based yogurt alternative. One interesting finding was that the gel strength of set yogurts decreased with higher pectin concentrations. This hands-on experience helps me to deepen my knowledge of food product development and food science. Huge thanks to Dr. Xinya Wang and Dr. Alejandra Acevedo Fani for your incredible mentorship and guidance throughout this project.

📢 Big news! Thanks to US$2M in funding from the Gates Foundation, the Sustainable Nutrition Initiative® is creating an interactive food system model for Kenya. This support will help shape a future where all Kenyans have access to safe, affordable, and nutritious diets year-round, no matter the challenges posed by environmental or economic pressures. Project leader Professor Warren McNabb says the model will build upon existing successful mathematical models, such as the DELTA Model® modelling global food and nutrient supply, and another concerning global trade in nutrients. In the future the model could influence land use policy, food trade policy, public health policy, and investment decisions. SNi® will be working with Kenyan-based researchers in the project, who will provide data and local expertise from Kenya.
