𝗧𝗵𝗲 𝗜𝗻𝘁𝗲𝗿𝗻𝗮𝘁𝗶𝗼𝗻𝗮𝗹 𝗪𝗵𝗲𝘆 𝗖𝗼𝗻𝗳𝗲𝗿𝗲𝗻𝗰𝗲 '𝘛𝘩𝘦 𝘞𝘩𝘦𝘺 𝘍𝘰𝘳𝘸𝘢𝘳𝘥!' in Dublin - While precision fermentation is still underutilized in whey valorization, the conference highlighted its potential to unlock better use of whey side-streams. 🚀 New year - new #deeptech portfolio companies! Welcome Galaxy Biosolutions to Chalmers Ventures! #foodtech #deeptechstartups Sweeteners that can replace table sugar represent a multi-billion market. The problem with many of the sweeteners that are currently cheap enough to be commercial alternatives is that they only provide a sweet taste. But sugar has more properties that are important to replace in, for example, baked goods, such as color, consistency, and volume. - Many foods today cannot be made in a low-calorie variant that both tastes good and has the consistency that the customer wants. We want to make a good sugar alternative that has everything except calories, says Teodor Fransson, co-founder of Galaxy Biosolutions. - The team has already received a good response in the food market. And in the long run, the goal is to identify other interesting products that can be produced with the help of precision fermentation, says Evelina Stoli Wängberg, company manager at Chalmers Ventures.
