🌟What a LANDMARK ! We just trained 55 Marriott #hotels from the UK to implement The PLEDGE™ on Food Waste certification!⚡⚡ My colleague Marco, Accredited Consultants Cristina and Alexander, and myself trained 120 chefs, FnB and General Managers during 10+ hours. We - as always – started with the WHY, then covered the 95 criteria, the compliance platform, the available resources, and trained participants on having a critical eye on the type of evidence to submit based on change implemented in their operations, and on existing touch-points to influence #customers in reducing plate waste.🍽️ Among them, 17 trainees were assessed to become Accredited Coordinator for The PLEDGE, to be the go-to persons when it comes to the certification process. We will announce them soon! BIG 👏🙏to the organizing team from Marriott International UK and Nordics, Joanna Chugh, Fernanda Lopez (with support from Sheena Williams and Kieran Madden) for such a visionary move!🌍 It may be difficult to realize for most, but for me working on this issue for more than 10 years, this is unheard of, and I am CONVINCED that it will inspire the European #hospitalityindustry to follow suit and strive for Zero Food waste. Participants also got a chance to listen to thought-leaders such as Douglas McMaster, the founder of Silo the world 1st zero waste restaurant. The could also enjoy #zero #foodwaste dishes prepared by an inspiring young chef Anna Pazdera!
