Having launched it at The Whisky Exchange Whisky Show at the weekend, here's some (quite a bit of) detail behind it from Waterford Distillery. The world’s greatest winemakers are all doing it. So, if it’s good for the vine, why not the grain? We refer to biodynamic agriculture of course – which sits at the forefront of regenerative agriculture – and is the high point of their developing core range. Biodynamics is the most ecologically advanced form of farming, with proven benefits for nature and climate – but we're also interested in what it does for natural flavour. Because biodynamics provides us with the most expressive whiskies.  The world’s biggest producers of biodynamic – and organic – whiskies. Demeter certified. Working with 6 biodynamic Irish farmers and take every last grain that they can get their hands on. No one is more dedicated to it. Cuvée Luna Luna 1.1 was an expression born of a single vintage, and was the world’s first biodynamic whisky ever released – as a 3 year old. But now they've assembled two of the oldest vintages as a cuvée, to create even greater layers of complexity – and as a cuvée is a continuous SKU. This combines 4 and 5 year old spirit distilled using biodynamic barley grown on 3 Irish farms. They've also updated the gift carton by making it white with blue foiling, to really stand out on the shelves from the rest of the range. What is biodynamic agriculture? Biodynamics is currently celebrating its 100th year. In response to mechanical and chemical changes to farming a century ago, Rudolf Steiner began to codify ancient farming wisdom as techniques for organic-minded growers to experiment with. What began as a simple series of lectures has become a worldwide phenomenon. Biodynamic farming seeks to repair the land, to give vitality to soils and plants, to treat the farm as a self-sustaining organism. It avoids the use of artificial fertilisers and pesticides. It is uber-organics. It also includes the application of unusual organic preparations for the land, as well as famously sowing and harvesting via the mystical lunar calendar, among many other things. Why should anyone care? Because – like those world greatest winemakers – of what it does for flavour. Creating a turbocharged soil, full of microbial life, creates a supremely healthy crop of barley, and from that can be extracted ever more intense natural barley flavours. For those of you in the trade working with retailers and bars looking to support sustainable brands, it does not get more environmentally sound than biodynamic farming. It’s the ultimate. You may have guessed that we’re passionate about this product… and certain that sommeliers, bartenders in the know, retailers who understand wine, restaurants who want the finest produce – anyone who wants the best most natural products possible, will want to try this whisky. We’re lucky to have it.
