Pizza Friday returned for the first time since Spring at Casa FWS 🤘 It’s been a busy summer season at FWS and I’m pretty sure this has been the first Friday off the tools since spring. Thanks to all our clients and amazing staff for a busy season. Many Chefs and KP’s still working tonight, but for me this was a welcome return of Pizza Friday. Pizza Friday began for us during lockdowns and has continued since then with a few interruptions due to business. After a really busy summer season, I had my most favourable evening return with family tonight. I increased the hydration this time which really made a difference in the dough quality. Beautiful pillowy crusts even in a domestic oven Great to have a Pizza Friday with the family again. Sometimes it’s the small things in life that make all the hard work worth it.
