  • This was so good last year - we felt this needed another share! THIS Christmas show stopper - Vegan Chocolate Orange Christmas Pudding was created by our friend Millie B INGREDIENTS: 60g plain flour 3 tbsp cornflour 2 tsp baking powder 120g dark brown sugar 5 tbsp cocoa powder 120g fresh white breadcrumbs ½ tsp ground mixed spice ½ tsp ground cinnamon finely grated zest and juice of 2 oranges (about 100ml juice) 60ml vegetable oil 1 tsp natural orange extract 300g mixed dried fruit and peel 70g pitted dates, chopped 120g dark chocolate chips Method: Grease a 1 litre pudding basin with dairy free butter & place a circle of greaseproof paper at the bottom. In a large bowl, mix together the flour, cornflour, baking powder, sugar, cocoa powder, breadcrumbs, spices & orange zest. Whisk orange juice, oil, orange extract & 80ml water together in a jug. Mix the wet ingredients into the dry ingredients, fold in the soaked dried fruits, dates & the chocolate chips. Transfer mixture to prepared pudding basin. Cut a large square of greaseproof paper & another of foil, both slightly bigger than the basin. Place foil over the paper & make a 2.5cm-thick fold in the centre of both layers. Place on top of the pudding basin, paper-side down, & fasten with a piece of string around the basin, under the lip. Tie another piece to this one, run it across the top of the basin & tie the other end to the string on the opposite side of the basin to create a handle, so that you can lift the pudding out of the pan. Place a upturned saucer at the bottom of a large saucepan & place the pudding basin on top. Fill the pan with hot water, about two-thirds of the way up the pudding basin. Cover the pot with a lid & bring to gentle simmer & steam for 3½ hours, checking occasionally & topping up the water if needed. After 3½ hours, lift pudding out of pan & leave to cool, until the pudding starts to shrink away from basin. Using a palette knife, loosen pudding from the sides and turn over onto a plate.
