Instruments from SepSolve and Markes International were recently featured on UK TV Channel 4's Food Unwrapped. The episode explored how cooking methods impact the aroma profile of cauliflower. Using the Centri® platform and our GC×GC–TOF MS system with the INSIGHT®-Flow modulator and BenchTOF2™ mass spectrometer, researchers at the University of Greenwich (Medway Campus) demonstrated how they could identify differences in the aroma profiles of steamed, roasted, and boiled cabbage. That said, the aroma profiles of spices are complex – they consist of hundreds of odour-active compounds, some of which have very low odour thresholds, meaning that even those at trace level can have a major impact on the overall aroma. These trace compounds can be difficult to detect among more abundant components, so a highly sensitive analytical method is essential for quality assessments. The result is a two-dimensional gas chromatography–time-of-flight mass spectrometry (GCxGC–TOF MS) system designed to enhance non-target screening of complex samples.
