"Reviving a lost heritage": Moroccan Mahia enters the UK Market The UK spirits market is set to welcome Sahara, a modern take on Morocco’s traditional Mahia – a fig or date-based spirit infused with aniseed. Historically crafted by Morocco's Jewish communities, Mahia's production had declined over time. Founder Omar Oualili hopes to revive the spirit, adapting the recipe to suit contemporary palates by reducing aniseed notes and enhancing fruit flavors, all without added sugars. Produced in Scotland due to regulatory challenges in Morocco, Sahara plans to expand into France and Morocco, aiming to bring a taste of North African heritage to cocktail menus across the UK.
