The flag of El Sauzal, adopted on 26 March 1999 by the Municipal Council, as proposed on 23 December 1997 by the Heraldry Commission of the Canary Islands upon request on 3 September 1997 by the Municipal Council, is prescribed by a Decree adopted on 22 February 2000 by the Government of the Canary Islands and published on 3 March 2000 in the official gazette of the Canary Islands, No. 27, pp. 2,653-2,654 (text).
The flag is described as follows:

Flag: Rectangular panel [...], in length one and a half the width, made of three horizontal stripes, the second twice higher than the other, the upper white - as a reference to snow covering the mountains -, the median green - as the expression of agricultural resources, especially grain crops and vineyards -, and the lower blue - as a symbol of ots maritime character and of the urban development of the coast.
When added to the flag, the coat of arms should be placed in the middle of the panel, preferably on both sides of the flag

The coat of arms of El Sauzal is prescribed by Decree No. 2,115, adopted on 27 October 1960 by the Spanish Government and published on 14 November 1960 in the Spanish official gazette, No. 273, p. 15,733 (text).
The coat of arms, approved by the Royal Academy of History, is not described in the Decree.

José Manuel Erbez (Banderas y escudos de Canarias, 2007; website) describes the coat of arms as follows:

Coat of arms: Per fess, 1. Azure a key or an an other argent crossed per saltire tied by a stole argent decorated or, 2. Argent a willow vert. The shield surmounted by a Royal crown closed.

The 1st quarter shows the attributes of St. Peter, the town's patron saint. The 2nd quarter shows the namesake (sauce) of the municipality.
