Logo-Design Kurzbeschreibung

We are starting a Mexican food trailer.
We need a logo and food trailer design.
We would like to keep the logo and design classy and clean.
Preferably we would paint to trailer one solid colour, then do decals where needed as a full wrap does not last long in the australian weather. We would like happy , colourful and bright . I have attached some ideas below.
Our business name is Mex Food truck. (mex being the main word, then food truck underneath) I would like to keep the logo clean and simple
