Coisas que me ajudaram muito no inicio da minha jornada em UX Design, foi redesenhar produtos existentes, no começo eu apenas os copiava e aprendia a melhorar minhas hard-skills de software de design, depois disso eu comecei a tentar melhora-las, após isso eu utilizei muito o desafio do Daily UI, onde eu de fato deveria criar uma tela nova baseada num tema específico. É uma ferramenta muito legal pra treinar. Claro que esses são exemplos mais simples para treino, nada substitui a atuação em projetos reais, experiência prática no mundo real. Para os iniciantes, eu indico se possível estágio em empresas que possuam uma boa estrutura de design, isso pode ajudar muito a evolução das habilidades práticas.
