After evaluation it's very very important to have proper legal document. Risk management and what happens if the contract is cut in between is critical. How will vendor performance be tracked. What fines or penalties you as a customer can impose if they don't do work properly can be done ? All this have to be mutually agreed. If deposit paid what are the terms to get a refund?

To my experience, we need to check scalability of the partners whether he will be able to deliver future growth and have the flexibility to adopt change in future. Moreover, we need to check sustainability and environmental impact of their practices. Also whether they are culturally fit to your organization or not.
