A good place to start security vetting is requesting for their compliance reports such as SOC2, PCI-DSS AoC, ISO27001 Certification, etc. While this may seem cliche, it is important that your team aptly goes through the report to understand the security technologies and also gaps/findings if any.

I would also consider references from other customers - how do they respond in an incident. How open and collaborative are their security team? Can you work with them once they are onboard? And also some simple market intelligence gathering - if security is barely mentioned on their website or in their literature, but is important to your service, that should be a red flag. I might also be a bit wary of industry certifications - they're a good indicator, but can often be a compliance tick-in-the-box rather than a culture.

In this case you need to understand and clearly communicate your company’s security needs, the access the vendor will need in to which systems, the access you will have into their systems. You also need to have a complete understanding of personnel access permissions and any fail overs. If everything is clearly discussed and documented before the project begins, then issues should be held to a minimum.
