No estoy muy seguro de que los desarrollos de laboratorio o herramientas como el Blockchain sirvan realmente y puedan reemplazar la producción orgánica eficiente. En América Latina tenemos potencialmente suficiente mano de obra y tierra como para generar una enorme cantidad de alimentos saludables. Pero para que esto los gobiernos los que deben tomar conciencia de que hay que apoyar y cooperativizar a los miles de pequeños productores dispersos por el continente de forma de obtener resultados de ambos lados basados en la economía circular y el comercio justo. El Blockchain es difícil de aplicar en procesos orgánicos, es apto para las transacciones de criptomonedas, pero con sólo suplantar un chip en un animal, se corta toda trazabilidad...

Esto, efectivamente es así, la disparidad de poder entre las grandes corporaciones y el sector productivo sumado a la tendencia hacia políticas neoliberales de desregulación y capitalismo salvaje, hacen muy difícil general comercio justo e igualdad de oportunidades sin un estado que ejerza como regulador de estas relaciones. La única solución viable es el cooperativismo, para lograr emparejar un poco la relación de poder. En mi caso fui coordinador del equipo que desarrolló el Sistema de Pago por Calidad (de leche) por el que pasa el 80% de la compraventa de leche cruda en Argentina. La idea era que se pudieran conocer los resultados de calidad y composición al mismo tiempo, permitiendo a los productores apelar dichos resultados.
