How do you manage food waste and disposal in an environmentally friendly and safe way?

One thing I have found helpful is to give your cooks a small container for their waste. Remove the big garbages from your kitchen and the only way the container gets emptied is by the chef. You control what goes into the garbage and have a real time teaching moment for your cooks. Educate them on how to fully use items and not just expensive items because all waste erodes your bottom line and adds to landfill if not disposed of organically. I have got down to a 16 Oz container. Your cooks naturally control their waste as well because they naturally pay attention to what goes into the container.

I find it helpful to use simple household cost effective approaches to tackling food waste. These include converting fresh fruits to juices and refrigerating them, turning fresh tomatoes into purees and also making sure that food that is purchased in bulk does not go waste in the house.

I am a cook. my experience reduces food waste you need to know how many people order the food, so you need to check the log sheet before the week. How much do you waste? how many people order the meal? For example, last week the meal log sheet records that you prepared for 80 people, but you sold 60 people, so this week you are less prepared than last week like you could prepare 70 people. When the prepared food is not enough and the meal station is almost closed time, at this time, you cook the meal for 3-5 people. when the meal station closes. almost no more waste or less waste
