I use the Pareto principle based on total contribution. This gives a starting point for any possible changes to the menu. For wages, prepare an hourly sales and wages report. This report should tell you how long it takes to breakeven on your daily wages and let you know whether the shoulders of your business need to be tightened.

As a D one should be able to plan the marketing calendar of the entire department well in advance of financial years for the SM team to take it forward within the right time frame.
