Consumers are increasingly interested in what is in their food, where their food comes from, and its impact on health. The field of food informatics takes a data-driven, systems approach, linking food information across production, processing, and consumption. This emerging field will catalyze food traceability and transparency in a way that was never before possible.

Preventing wastage and spoilage of what’s grown by Mother Earth. Data shows 30% to 60% is wasted due to lack of resources, technologies and guidance to the Farmers. Middlemen and big corporations exploit to their advantage. If nothing is wasted there is No hunger on the Planet Earth. Also Food Processing Waste: once you discover the value it can definitely be used to create “VALUE ADDED PRODUCTS”. This trend is getting more attention in the Food Processing Industry. I guided a company in this project..

Data-driven approach is of utmost importance, but it's crucial to ask, where does that data come from? What I am getting at is that it is very important to have the bandwidth to generate, analyze and act on the data that is obtained. Otherwise, if the chain is broken, the potential to derive insights might be limited.

In the future, food science will revolutionize problem-solving by harnessing cutting-edge technologies such as AI and genomics. These tools will be pivotal in addressing critical concerns like food safety, sustainability, and personalized nutrition. While biotechnology has been used to modify crops to have high yeild in the midst of diversity, I don't think biotechnology is the utmost solution in Africa to curb food insecurity. In Africa, we have indigenous crops such as fonio,amaranth, varieties of millet, vegetables etc,that were regarded as "the poor man's food" when colonizers brought rice and spinach&made them staples in Africa. Biotechnology has brought up modified foods which have replaced our traditional foods, yet compared to the latter, they have lower nutrients causing an increase in health related problems. This problem could however be solved by sensitizing people to regrow traditional foods. As food scientists, through product development, we can make them more appealing.

Biotechnology addresses food problems by enhancing crop traits for improved yield and resistance to pests and diseases. It fortifies crops with essential nutrients, prolongs shelf life through preservation methods, and develops disease-resistant livestock. Sustainable practices like bio-fertilizers reduce environmental impact, while biotech-driven alternative protein sources offer solutions to traditional farming challenges. These innovations tackle food insecurity, malnutrition, and sustainability issues in the global food system.

Biotechnology is the use of biological systems, living organisms or derivatives to develop or modify products/ processes for specific use The benefits of biotechnology applications are as follows 1) The number one advantage of biotechnology is the increased production of food 2) Biotechnology has also made it possible to grow crops without the use of chemicals, pesticides and herbicides since the GM crops already have built in immunity to disease and pests 3) The cost of producing crops is decreased since the need for pesticides and herbicides is decreased 4) Some biotechnologically produced crops that are high in some nutrients that ordinary crops are not high in 5) Biotechnologically produced crops that have an increased shelf life

Food fraud and food traceability by the use of multi-omics Fingerprinting. AI based training manuals which alter the content of the training manual depending upon the learners ability. Anything and everything going beyond is powered,centered, influenced and materialised by AI.

There will be future trend in Food Science which will focus on food packaging, Al and robotics, innovation in processing and production and problem solving ideas with technological approach. Food biotechnology is also an emerging field in terms of sustainability and food security.

In food science, a trend is the move towards consumer-centric solutions that address the diverse needs and preferences of consumers. Consumers seek health, safety, ethical, environmental, and social aspects in food products. They desire personalized, convenient, and enjoyable food experiences. Food scientists use these solutions to design products that meet consumer expectations and educate them about food choices. Food science in many ways requires consumers to be a big part of its decision making. Consumers have different experiences and pain points that may not be seen by the producers and R&D. They are a big part of the drive in changes in the market, so it would be beneficial to include them in the process.

Strongly believe future of Food Technology is and will be a collaborative approach of different basic science and advanced technologies bringing together to get most consumers centric, sustainable, nutritious, and safe solutions. Future approaches will be more towards getting down the impact of food system on environment throughout the value chain from selecting the right source of protein to optimising the processing technologies to supply chain and zero waste technologies. Based on my experience, collaborative solutions using certain applications helped my trainees and me a lot while delivering food safety training sessions. With these apps, the process of capturing the trainees' responses is quick and easy. The system eliminates manual data entry and delivers accurate results in real-time with visual representations that make it easy to track trainee progress and assess their understanding. Trainees can respond using devices or paper questionnaires, and trainers can quickly get valuable insight into what trainees are thinking, where help is needed, and which concepts have been mastered.

The sciences will need to be collaborative to leverage our research innovations and lift new developments over the start-up hump, to get them off the ground. It also includes financing collaborations and various disciplines coming together with a common goal.
