iOS and Android are here to stay; my advice for a developer who wants to choose this path would be to not pick one platform over the other and get expertise on both. If you are planning a career in mobile development, my recommendation would be to resist your urge to start with cross-platform frameworks. Unless you understand the intricacies of the native platforms and their SDK deeply, using cross-platform conveniences is going to severely limit your ability to write highly performant and scalable apps.

Don't limit yourself to platforms. I've been developing native apps for both iOS and Android, and at this point in time both of them have almost similar development style. Jetpack Compose and SwiftUI have made development a lot faster and bearable. Kotlin and Swift are also somewhat similar. Cross platform frameworks are here to stay as well, and I've personally seen that there are a lot more job openings for cross platform developers than native ones. Pick your poison carefully, as both the platforms have good and bad about them. If you were to ask my personal opinion, I'd say start with learning Flutter and then taking a look at Compose and SwiftUI.

From a development perspective, I think the language you start off with depends o n your philosophy and background. For me I started off programming in Java and was attracted to Android as it was something I was familiar with at the time. That then led on to evolve to using Kotlin for Android. Developing for iOS, I get a closed off feeling where you must use a Mac for iOS development, you can't really change the hardware or tinker with the OS too much. Both approaches have their merits and values, so the best bet is to try both and see which one resonates more with you.
