No matter what the reason is, never talk negatively about your previous employer even if you ended on bad terms. Give an honest, straightforward, and valid reason that describes your reasonable plan on taking a new step and joining a new company.

Always tell the truth, then you can always be authentic and your integrity (often one of the most important values a company is looking for) remains intact and you don't need to remember what you said to whom. I would also ensure that you have written down and practiced your narrative a number of times, so it comes across naturally and always remember less is more. Keep it professional and succinct and if your emotions are raw about the ending of your role, say any negative comments about your previous company in your head and not out loud. Good luck.

Everyone knows that candidates want to leave because of some problems at work (low pay, toxic boss, bad work-life balance, etc.) So why are you asking this question still? I agree with the importance of telling the truth. A potential employer wants to hire someone they can trust. I also think it is important to be aware of boundaries, and to act with professionalism at all times. This means, "don't be tempted to overshare".
