Combining your Data and AI strategies together, you can leverage tools like AWS Macie to auto-tag features that are classed as private (E.g., personal information). When combined with a Lake House or Warehouse, private classed data is automatically excluded from those not eligible to view it. An automated training process can be authorized to see the data, whilst for an unauthorized end-user, they will never know that the feature exists. In my experience, it's easier to prevent unauthorized users than to leverage any other option.

Perform a Data Protection Impact Assessment (DPIA) to identify the risks to privacy of individuals and plan for mitigating or reducing the identified risks. This is by far the most effective way to ensure privacy.

It’s important to keep in mind that synthetic data is one of the most important fields of AI development to be able to protect IP / privacy of data and also to be able to augment datasets (human-produced data is limited in nature and we will soon need additional data to be able to refine models).

While it is tempting to rely on technology like homomorphic encryption to protect data, it can be dangerous to do so. Obfuscation techniques considered secure today are often found to be insecure in future, and the life of the technique should exceed that of the data.
