Some possible answers might be a) It enhances the communication experience of students, especially those who are not native english speakers; b) It makes my student's work more efficient in terms of time spent; c) NLP is important to me, because I don't care about typing speed or grammar, but I would like my students to communicate to me, their understanding of the concepts. There could be many other reasons, but clarity of "why" is paramount to start the process.

Definitely consider the accessibility of the tech to students. a) Do they have the minimum required smartphones / tablets / laptops b) Are they able to access and use good Wi-Fi or cheap 4G / 5G data (as many NLP products still depend on a robust internet connection to analyze the voice inputs and respond) c) Do they have access to good support (from you as a teacher / IT team / vendor etc.)
