From a post-production perspective, the key is having the experience, knowing the template, and using the plugins that allow you to clean up, level, and balance your audio in minutes. Good audio from the field team is obviously a must. After that, you can spend the remaining time on sound design and further cleanup. You probably won't get "top-notch audio quality" without a dedicated mixer, though.
