Being an ERP consultant one has to know well about the product capabilities, if you know well you can fit in with the existing functionalities with the minimum level of customizations.. I believe educating end users in a proper manner resolves these customization requests. And yes an ERP has to be a recognized one not like soo called ERPs but actually not more than enhanced MIS systems.
