One thing I have found helpful when being overwhelmed by unexpected demand is to set realistic expectations. Work with your client on priority levels and come up with a timeline that works for them and for you. The worst thing you could do, is say yes to all their demands and fail to deliver. By setting the realistic expectation early on, your client will know what to expect and will afford you time to plan strategically.
