We recently kicked off the 2025 ACE competition. Several Destination’s Culinary leaders have been selected to compete! ACE spotlights Aramark’s culinary talent in alignment with American Culinary Federation (ACF) standards. It provides an opportunity for Aramark chefs to showcase their passion for excellence in a competitive, exciting environment. This past Friday, five of our Destinations chefs competed at the ACE Destinations regional competition held at our headquarters in Philadelphia. Listed below are the chefs who competed and their creative entrée using whole salmon that had to be done within a short window of time. Joe Masino – honey-black garlic salmon with salmon belly risotto, thyme roasted Brussel sprouts, cranberries Greg Knight – seared salmon with salmon sunchoke croquette, curried carrot puree, charred cucumber salad, chorizo douche condiment Ben Tyson – pan seared salmon filet, citrus farro salad, almond peso dressing Daniel Meier – pan seared salmon, parsnip puree, salmon and leek bechmel croquette, roasted butternut squash, arugula, brown butter vinaigrette David Baron – salmon roasted carrot, sweet potato coulis, sunflower root and cauliflower gratin, citrus beurre blanc The winners of these regional rounds will be invited to compete at the Destinations National Competition in early April and then representing the Destination’s team in the Aramark ACE Competition where we will be competing against the other business units across the globe!

Four of our Chefs just showcased their immense talent and culinary expertise at our first of three regional Aramark Culinary Excellence (ACE) competitions in Chicago! They impressively set up their station in 15 minutes, cooked a magnificent entrée in an hour using a whole salmon, and plated it all beautifully within 10 minutes. Here's a round of applause for their exemplary resilience even in the face of the sudden snowstorm. On to Philadelphia this week for the next round of competition!
