  • Did you know we purge our clams in a state-of-the-art wet storage system using filtered water from our main harvest site? This not only reduces grit, but also increases the clams' shelf life. Purging encourages them to expel sand and clean their guts. Since the water is filtered, there isn't anything for the clams to eat, so their metabolisms slow and it essentially puts them in 'hibernation' mode, so they expel less energy and stay alive without food longer. We do still recommend rinsing your clams before preparing them, as some sediment may remain on the clams after purging.
