Now that the summer months are at their scorching peak, many are taking their gatherings and meals outside by the pool, lake, or ocean to cool off. Fun in the sun at summer cookouts is a must, but so is following the rules of food safety. The extreme temperatures outside make these rules even more crucial, as certain pathogens can proliferate in the higher temps. Here are some basic tips to ensure your barbecue guests stay happy and healthy this summer: Wash Hands– thoroughly, before and after preparing food, and after using the bathroom. Avoid cross contamination– by keeping raw food separate from cooked foods. Keep separate utensils and surfaces for each. Marinate foods in the refrigerator, not outside or on the counter. Ensure foods are cooked thoroughly– use a food thermometer; research minimum internal temperatures for the meat you are cooking. Refrigerate/freeze cooked foods– don’t let cooked food sit out for more than 2 hours (1 hour if temperatures are over 90F). Reheating– when reheating cooked food, ensure it reaches over 140F or 165F for meat/poultry. Keep hot foods HOT and cold foods COLD– put cold foods directly on ice if possible.
