According to Emilie Mesnier, the primary driver of palatability for dogs is smell, with up to a 90% correlation between smell and taste preference. Cats, on the other hand, prioritize texture, nutrition, moisture, mouthfeel, and digestibility. Either way, “Palatants must overcome any off flavors from added nutritional components like vitamins, minerals, and functional ingredients while maintaining overall product appeal,” Emilie explained.
