Add the onion, jalapeño, and 1/2 teaspoon salt. Sauté for about 2 minutes, then stir in the garlic and cook until fragrant (about 30 seconds). Transfer the mixture to the slow cooker. 3️⃣ Add the bay leaves, cumin, oregano, cayenne pepper (if using), remaining salt, water, and broth to the slow cooker. Cover and cook on HIGH for 8–10 hours, until the beans are tender. Remove and discard the bay leaves before serving. 4️⃣ Heat a nonstick skillet over medium heat and fry the eggs to your desired doneness (sunny-side up works beautifully). 5️⃣ In a bowl, layer a scoop of rice and a generous ladle of pinto beans.
