To start the year strong, review your policies and follow these steps for a powerful meal: 1️⃣ Place the pinto beans in a large colander. Rinse them thoroughly and discard any damaged or misshapen beans. Add the rinsed beans to a 6-quart (or larger) slow cooker. 2️⃣ Heat the olive oil in a medium skillet over medium-high heat. Add the onion, jalapeño, and 1/2 teaspoon salt. Sauté for about 2 minutes, then stir in the garlic and cook until fragrant (about 30 seconds). Transfer the mixture to the slow cooker. 3️⃣ Add the bay leaves, cumin, oregano, cayenne pepper (if using), remaining salt, water, and broth to the slow cooker. Cover and cook on HIGH for 8–10 hours, until the beans are tender. Remove and discard the bay leaves before serving. 4️⃣ Heat a nonstick skillet over medium heat and fry the eggs to your desired doneness (sunny-side up works beautifully). 5️⃣ In a bowl, layer a scoop of rice and a generous ladle of pinto beans. Here's how you get this party going: 1️⃣ Preheat the oven to 350°. 2️⃣ Fold the phyllo sheets like an accordion and assemble them in a round baking pan, forming a flower. 3️⃣ Thin-slice the zucchini, sun-dried tomatoes, and onions. 4️⃣ Beat the eggs with pesto, salt, and pepper. 5️⃣ Arrange the zucchini, onion, sun-dried tomatoes, and bacon strips on the slats between the phyllo sheets (flower petals), then pour the pesto and egg mixture all over. 6️⃣ Bake for 25 minutes at 350°. Remove, let it sit for 5 minutes. 7️⃣ Add some chopped pine nuts and a drizzle of honey on top if you like it savory and sweet!
