ON THE ROAD with Vice President of Restaurants, Bars & Events Nathaniel Brethold who recently traveled to the Champagne region of France. Nathaniel’s trip was both inspirational and immensely valuable for making crucial industry connections. Over the course of five days in Reims and Épernay, he immersed himself in the rich heritage and intricate processes that define this prestigious wine region. The highlight of his experience was the opportunity to participate in exclusive tours of renowned properties such as Krug and Rare Cellars. At Krug, he gained a deeper understanding of their meticulous production techniques and the artistry behind their blends, which emphasized the importance of terroir and craftsmanship in creating exceptional Champagne. Similarly, the tour at Rare Cellars offered insights into the innovative approaches they employ, revealing how tradition and modernity can coexist in the pursuit of excellence. Additionally, visiting the birthplace of Champagne, the historic site associated with Dom Pérignon, was a profound moment. Standing where this legendary figure revolutionized sparkling wine production deepened his appreciation for the legacy and artistry involved in Champagne making. Throughout the trip, he engaged with industry leaders and fellow enthusiasts, fostering connections that will be invaluable for CoralTree’s future endeavors. The knowledge gained, combined with the relationships built during this journey, undoubtedly enriched his perspective and understanding of the Champagne industry. This experience has inspired him  to further explore the complexities of this field and cultivate the connections he established in the heart of Champagne on behalf of the company.

Today, we celebrate the opening of Hotel Polaris at the U.S. Air Force Academy in Colorado Springs! The hotel is setting a new standard for hospitality in the Pikes Peak region with modern elegance and personalized service that reflects the beauty and grandeur of its landmark location. Open to the public and located outside the North Entrance of the Academy, the 375-room resort-style hotel offers six food and beverage experiences, a boutique spa and wellness center as well as signature guest services including the only flight simulators at a hotel in the United States. The food and beverage experience is highlighted by Pamela’s, celebrating American cuisine; The Aviator Bar, with stunning rooftop views and a refined cocktail experience; and Doolies soda shop with a fun, casual family-friendly vibe. In addition, Ascend Spa & Wellness offers a full-service, six-room spa and wellness center. Hotel Polaris also offers an array of curated guest services to further enliven the spirit of the area including the only immersive flight simulators at a hotel in the U.S. Guests can buckle up and take flight in one of three flight simulators that provide guests with a high-quality, immersive, fully tactile, real-life pilot experience. The simulators reproduce the flight-deck experience of two F-16s and one 737 Max with seats, throttles, switches, pedals and yoke from original parts of real aircrafts (other parts of the flight deck are scale reproductions). The experience includes a 200-degree wraparound screen with HD imagery to make the experience as life-like as possible. Guests can select the type of experience they want from an F-16 dog fight to taking off from Denver International Airport and landing in London in the 737 Max. The hotel also offers several other inspired signature experiences including the K9 Cadets dog-friendly program, Junior Cadets kids’ activities, a glider and paper airplane program and more.airplane program and more.
