Thank you to all those who joined this morning's program, "State of the Industry Roundtable." We are especially grateful for those who provided legislative updates and advocacy best practices to our attendees - our community partners at the Colorado Restaurant Association & Foundation (Sonia Riggs, Hon. AIA, CAE, Rebekah Hernandez, and Denise Mickelsen) and voices from our independent food and beverage community (Juan Padro, Dana Faulk Query, and Kate Kaufman). About us
EatDenver is a nonprofit membership organization that connects and empowers our regional independent food and beverage community. Our work includes hosting monthly industry education programs and facilitating opportunities for professional development, fostering collaboration within the industry through a digital membership platform and networking events, marketing independent restaurants through headline events and social media, and advocating on a local and statewide scale for the needs and values of an inclusive and equitable food and beverage community. Since 2006, our membership has grown to over 380 regional and independent food and beverage concepts, including restaurants, bars, coffee shops, breweries, bakeries, food trucks, and food hall stalls. Guided by a belief that a rising tide lifts all boats, the foundation of our organization is in creating a resilient community of owners, operators, chefs, managers, and staff. By Denver Westword’s count, 270 new bars and restaurants opened in the Denver region, including a handful at Denver International Airport - City & County of Denver Dept of Aviation. Congratulations to our new, returned, and expanded neighbors! Despite these amazing accomplishments, over 100 concepts also closed their doors last year. In Denver specifically, The Denver Post reported that the number of restaurants in Denver "has dropped by 22% over the last three years...indicative of the challenges eateries continue to face beyond the coronavirus pandemic.” In Colorado specifically, about 3 cents is all that remains from each dollar spent at a restaurant after labor, overhead, and food costs (Colorado Restaurant Association & Foundation), reflecting a national profit margin average of 3-5% (Toast). That means that 97 cents of every dollar goes directly back into our local economy. It also means rising costs continue to challenge slim margins. So thank you for supporting local in 2024, thank you for your continued patronage in 2025, and cheers to all the exciting food and beverage to come 💙

A warm welcome to our newest EatDenver members, Edgewater Inn Pizza and Lot 46 Music Bar 🍕🍻 Meet Niya Gingerich and Grant Gingerich — longtime Denver entrepreneurs passionate about great food, music, and community. After years of running Berkeley's Local 46, they’ve brought their vision to the historic Edgewater Inn, continuing Ben DiPietro's 75-year legacy with staples like the Howdy Pizza, fresh-pulled mozzarella, and beer schooners. The next iteration of the prior music venue, the adjacent Lot 46 Music Bar is a 70s retro dive that features live music acts, karaoke, and DJs in the spirit of a neighborhood public house. Niya’s goal? To create a locals' spot where "there’s something for everyone...a home away from home." Visit Edgewater Inn Pizza daily and Lot 46 Music Bar from Tuesdays through Sundays on Edgewater's 25th Street.
